It wouldn’t be a Cantonese family dinner without steamed fresh fish, with everyone’s favourite undoubtedly garoupa. The waters off the Pratas Islands, to the east of Hong Kong, yield some of the best catches of this distinctive fish. Its reddy orange skin with blue dots, which remind of stars in the sky, reveals tender, snow-white meat rich in collagen.
